Technical Transformations in the food Consumption & Production System
Researchers: Dr Andrew Flynn, Dr Natalia Yakovleva
Background
This project was funded by ESRC and formed part of Sustainable Technologies Programme. The research developed case studies of different food products (potatoes and chicken in Cardiff University, salmon, cod, tomatoes and yogurt in UMIST). These studies were based on analyses of market reports relating to selected food products and interviews with key actors within the supply chains of the selected food products. The research also involved the development of sustainability indicators, sustainability assessment of the current supply chains of the selected food products and further scenario building concerning food consumption and production strategies such as local, global, conventional and organic supplies.
